Pioneer Woman Best Stuffed Eggplant

Pioneer Woman best stuffed eggplant is an easy dinner made with roasted eggplant halves, spiced ground beef and fluffy couscous, ready in 45 minutes. Save this healthy weeknight eggplant dinner for summer nights, Sunday lunch or dinner parties, because it's a complete one-dish meal with Moroccan flavor.

Rub the spice mixture and salt right into the eggplant flesh before roasting, because that is where most of the flavor comes from. Skip it and the eggplant tastes flat next to the bold beef filling.

Folding the couscous into the beef with lemon juice and cilantro turns this into a full meal, so you don't need a side dish. Pulling the roasted flesh apart with a fork also makes a cozy well that holds the filling without piercing the skin.

Tender roasted eggplant holds a spiced beef and couscous filling, finished with cool Greek yogurt and fresh cilantro. The warm spices and bright lemon keep every bite balanced and not too heavy.

Ingredients

  • 1 1/2 tsp. ground coriander

  • 1 1/2 tsp. ground cumin

  • 1 1/2 tsp. black pepper

  • 1 tsp. paprika

  • 1/4 tsp. crushed red pepper flakes

  • 1/4 tsp. ground cinnamon

  • 3 medium eggplants (about 1 lb. each)

  • 2 tsp. kosher salt

  • 3 tbsp. olive oil, plus more for drizzling

  • 3/4 c. couscous (not pearled)

  • 1 medium yellow onion, chopped

  • 1 red bell pepper, chopped

  • 1/2 lb. ground beef (85/15)

  • 3 garlic cloves, finely chopped

  • 1 (15-oz.) can diced tomatoes

  • 1 tbsp. lemon juice

  • 1 c. cilantro, chopped

  • 1/4 c. whole milk Greek yogurt

Directions

  • Preheat and mix spices: Preheat the oven to 425°F. Then combine 1 1/2 teaspoons ground coriander, 1 1/2 teaspoons ground cumin, 1 1/2 teaspoons black pepper, 1 teaspoon paprika, 1/4 teaspoon crushed red pepper flakes and 1/4 teaspoon ground cinnamon in a small bowl.
  • Season the eggplant: Cut the 3 medium eggplants in half and place them on a baking sheet, then rub 1 teaspoon of the kosher salt into the flesh. Drizzle with 1 tablespoon of the olive oil and rub with 4 teaspoons of the spice mixture.
  • Roast the eggplant: Bake the eggplant cut-side up for 30 to 35 minutes. It's ready when the flesh turns tender and golden.
  • Cook the couscous: While the eggplant roasts, bring 3/4 cup water to a boil in a small saucepan. Stir in 3/4 cup couscous, 1 tablespoon of the olive oil and 1/4 teaspoon of the salt, then cover and remove from the heat. Let it sit for 5 minutes before fluffing with a fork.
  • Cook the beef filling: Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Then cook the chopped yellow onion and red bell pepper for 3 to 5 minutes until soft and translucent, and add 1/2 pound ground beef. Cook, crumbling with a wooden spoon, until no longer pink.
  • Add spices and tomatoes: Stir in the 3 chopped garlic cloves, the remaining 3/4 teaspoon salt and the remaining spice mixture, and cook until fragrant. Then add the 15-ounce can of diced tomatoes with their juices and simmer gently for 5 minutes so the flavors come together.
  • Fold in couscous: Add the couscous, 1 tablespoon lemon juice and three-quarters of the 1 cup chopped cilantro to the beef mixture. Gently fold it all together, then remove from the heat and keep warm.
  • Stuff and serve: Transfer the eggplant halves to a serving platter and pull the flesh apart with a fork to make room, being careful not to pierce the skin. Divide the beef filling among the halves. Then top each with some of the 1/4 cup Greek yogurt, a drizzle of olive oil and the remaining cilantro.

FAQs

Can I make this stuffed eggplant without the cinnamon?

Yes, you can leave it out, since it only adds a faint warmth in the background. Cumin and coriander still carry the Moroccan-style flavor on their own.

Can I freeze the beef and couscous filling?

The beef filling freezes well for a few months in an airtight container, but couscous can turn mushy after thawing. For the best texture, freeze the beef mixture alone and make fresh couscous when you reheat it.

How do I keep the eggplant from getting bitter or soggy?

Salting the flesh before roasting draws out moisture and softens any bitterness. Roasting it cut-side up at 425°F also lets that moisture evaporate instead of pooling.

Can I make this without a baking sheet?

A large roasting pan or a 9x13 baking dish works just as well. Just make sure the eggplant halves sit in a single layer so they roast evenly instead of steaming.

What's the most common mistake with stuffed eggplant?

Piercing the skin while making room for the filling is the big one, because the filling then leaks out and the shell falls apart. Go slowly with the fork and only pull the soft flesh apart from the inside.
