Pioneer Woman Blackened Salmon Burgers

Pioneer Woman blackened salmon burgers are juicy, crisp-edged burgers with fresh salmon, smoky spices and creamy avocado-lime mayo that come together in 40 minutes. It's an easy summer salmon dinner for weeknights, cookouts or Fourth of July, and it's made in one cast iron skillet.

Chop half the salmon small and blend the other half smooth, because that mix of textures holds the patties together. Skip the blending and they crumble in the skillet instead of forming a crust.

Blackening the patties in a hot cast iron skillet gives you a deep, spicy crust while the inside stays flaky. Folding the spice mix into the patties and seasoning the outsides too means every bite tastes bold, not just the surface.

Chunks of fresh salmon are pulsed with panko and scallions into patties that crisp up in a hot skillet and stay flaky inside. A cool avocado-lime mayo and toasted potato buns finish each burger.

Ingredients

  • 1/3 c. mayonnaise

  • 1/2 tsp. kosher salt, plus more to taste

  • Grated zest and juice of 1 large lime

  • 1 large avocado

  • 1 tbsp. kosher salt

  • 4 tsp. sweet paprika

  • 2 tsp. garlic powder

  • 2 tsp. onion powder

  • 1 tsp. dried oregano

  • 1 tsp. black pepper

  • 1/2 tsp. cayenne pepper

  • Cooking spray

  • 2 lb. skinless salmon fillets, cut into 1-inch chunks

  • 3 tbsp. mayonnaise

  • 1/2 c. panko

  • 4 scallions, sliced

  • 1/4 c. vegetable oil

  • 6 potato hamburger buns, split

  • Sliced tomatoes, sliced red onion, and lettuce leaves, for topping

  • Potato chips, for serving

Directions

  • Make the avocado-lime mayo: Puree 1/3 cup mayonnaise, 1/2 teaspoon kosher salt, the zest and juice of 1 large lime and 1 large avocado in a food processor until smooth. Season with more salt if needed, then scrape it into a bowl and press plastic wrap on the surface so it stays green. Refrigerate until serving and wipe out the food processor.
  • Mix the spice blend: Stir 1 tablespoon kosher salt, 4 teaspoons sweet paprika, 2 teaspoons garlic powder and 2 teaspoons onion powder in a bowl. Then add 1 teaspoon dried oregano, 1 teaspoon black pepper and 1/2 teaspoon cayenne pepper, and keep it close because you'll use it two ways.
  • Prep the pan and salmon: Preheat the oven to 350°F, line a baking sheet with parchment paper and spray it with cooking spray. Pulse half of the 2 pounds salmon chunks in the food processor until chopped small, then move it to a large bowl.
  • Blend the binder: Add the remaining salmon to the processor with 3 tablespoons mayonnaise and blend until mostly smooth. Then add it to the chopped salmon along with 1/2 cup panko, 4 sliced scallions and half of the spice mix, and mix well.
  • Form the patties: Shape the mixture into six 4-inch patties on the prepared baking sheet. Season both sides with the remaining spice mix.
  • Toast the buns: Set the 6 split potato hamburger buns cut-side up on a second baking sheet. Bake until toasted, about 5 minutes.
  • Blacken the patties: Heat 2 tablespoons of the vegetable oil in a large cast iron skillet over medium-high heat, then add 3 patties. Cook until browned, 3 to 4 minutes per side, and wipe out the skillet before repeating with the remaining oil and patties.
  • Build and serve: Spread avocado-lime mayo on the toasted buns and set a patty on each one. Top with sliced tomatoes, sliced red onion and lettuce leaves, then serve with potato chips.

FAQs

Can I use canned salmon instead of fresh?

Fresh salmon gives these burgers their flaky, juicy bite, so I'd stick with it. Canned salmon is softer and wetter, so you'd likely need extra panko to hold the patties together, and they won't crisp quite the same.

How long do leftover salmon burgers keep?

Store cooked patties in an airtight container in the fridge for up to 2 days. Reheat them in a skillet over medium heat so the crust crisps back up, since the microwave makes them soft.

What can I use instead of panko?

Regular plain breadcrumbs work as a one-to-one swap, though the patties will be a little denser. Crushed crackers also do the job and add a bit of salt.

How do I keep the avocado mayo from browning?

Press plastic wrap directly onto the surface so no air touches it, then refrigerate it. The lime juice in the mix helps too, but the wrap does most of the work.

What's the biggest mistake with salmon burgers?

Flipping too early is the usual problem. Let each patty brown for the full 3 to 4 minutes so a crust forms, because that crust is what holds the burger together when you turn it.
