Pioneer Woman BLT Burger Slider

Pioneer Woman BLT burger slider takes 30 minutes and ground beef, crispy bacon and fresh tomato to make a juicy, bite-sized party burger. Save this easy game day slider recipe for Super Bowl parties, graduation cookouts or summer potlucks, because it's broiled in minutes with no grill needed.

Mix the heavy cream and Worcestershire sauce right into the beef, because that's what keeps these little patties juicy. Skip it and the sliders dry out fast under the broiler.

Broiling the patties on a wire rack lets the heat hit them from above while the fat drips away, so you get a browned top without any grill. Breaking each bacon slice in half also means every slider gets a full crispy piece that fits the small bun.

Tender beef patties with a browned top sit on soft slider buns under crisp bacon, cool lettuce and thin tomato slices. Broiling keeps them quick, and the cream in the beef keeps each bite juicy.

Ingredients

  • 8 slices bacon

  • 2 lb. ground beef

  • 1/4 c. heavy cream

  • 6 dashes Worcestershire sauce (or less if you prefer!)

  • 1 tsp. kosher salt

  • Black pepper, to taste

  • 8 slider buns, split

  • Ketchup and mayonnaise, for serving

  • 8 small leaves romaine lettuce, cut in half

  • 2 Roma tomatoes, thinly sliced

Directions

  • Cook the bacon: Preheat the broiler, then fry 8 slices of bacon in a large skillet over medium-high heat for about 8 minutes until slightly crisp. Drain it on a paper towel-lined plate and break each slice in half.
  • Mix the beef: Combine 2 lb. ground beef, 1/4 c. heavy cream, 6 dashes Worcestershire sauce, 1 tsp. kosher salt and black pepper to taste in a bowl. Mix thoroughly with your hands so the cream and seasoning are spread evenly through the meat.
  • Shape the patties: Form the beef into 16 patties about 3 inches in diameter. Place them on a broiler pan or a wire rack set on a rimmed baking sheet.
  • Broil the patties: Broil the patties for 4 to 5 minutes, rotating the pan halfway through. They're ready when just cooked through, so check on the early side because sliders overcook quickly.
  • Build the sliders: Spread the split slider buns with ketchup and mayonnaise. Then set a patty on each bun and top with the romaine pieces, sliced Roma tomatoes and bacon.
  • Skewer and serve: Push a toothpick through each slider to hold the stack together. Serve them warm while the patties are still juicy.

FAQs

Can I cook these sliders on the grill or in a skillet instead?

Yes, a hot grill or a cast iron skillet both work if you don't want to broil. Cook the patties just until cooked through, since they're small and go from juicy to dry quickly.

How should I store leftover BLT burger sliders?

Keep any leftover patties and bacon in an airtight container in the fridge, separate from the buns, lettuce and tomato. Reheat the patties gently and build fresh sliders, because the assembled ones turn soggy.

Can I use turkey or chicken instead of beef?

Ground turkey or chicken will work, though the sliders will be leaner and a bit milder. Keep the heavy cream in the mix and watch the broiler time so they don't dry out.

What can I use if I don't have slider buns?

Small dinner rolls or Hawaiian rolls split in half make a good swap. You can also cut regular hamburger buns down to size, or make fewer, larger patties for full-size burgers.

What's the most common mistake with these sliders?

Overcooking is the big one, since 3-inch patties cook very quickly under the broiler. Check them early and pull them as soon as they're cooked through.
