Pioneer Woman champagne cake pops take 3 hours 20 minutes and a vanilla cake mix, sparkling wine and white candy melts to make a bite-size, creamy celebration dessert. This make-ahead bridal shower dessert idea fits New Year's Eve, birthday parties, brunch spreads and wedding showers.
Freeze the cake balls for at least an hour before dipping, because cold, firm centers hold onto the stick and the candy coating. Skip it and the balls turn soft, slide off the sticks and leave you with a messy pile.
Blending the crumbled cake into a champagne buttercream, instead of plain frosting, puts real bubbly flavor in every bite. Dipping the stick tip in melted candy first also glues each pop in place, so nothing slips while you coat it.

kcalSoft champagne cake and buttercream roll into smooth little balls with a crisp white candy shell. A drizzle and a sprinkle of pearls finish each pop with a shimmery look.
Ingredients
Baking spray, for the pan
1 (15.25-ounce) box vanilla or white cake mix
1 cup sparkling wine (such as champagne, prosecco or cava), at room temperature
3 large eggs
1/2 c. vegetable oil
8 tbsp. (1 stick) salted butter, at room temperature
2 1/4 c. powdered sugar
2 Tbsp. sparkling wine (such as champagne, prosecco or cava), at room temperature
3 c. white candy melts (about 15 oz.)
40 (6-inch) lollipop sticks
1/4 c. mixed white nonpareils and white sugar pearl sprinkles (any combination)
Directions
- Preheat and prep pans: Preheat the oven to 350°F, then spray a 9-by-13-inch baking pan with baking spray and line it with parchment paper. Line a second baking sheet with parchment too, since the cake balls will chill on it later.
- Mix the cake: Whisk 1 box vanilla cake mix, 1 cup sparkling wine, 3 large eggs and 1/2 cup vegetable oil in a large bowl. Pour the batter into the prepared pan and spread it evenly.
- Bake and cool: Bake for 20 minutes, until the cake bounces back when gently pressed. Let it cool in the pan for 10 minutes, then turn it out onto a wire rack, remove the parchment and cool completely, about 1 hour.
- Whip the buttercream: Beat 8 tablespoons salted butter in a stand mixer with the paddle on medium speed until creamy, 1 to 2 minutes. Add 2 1/4 cups powdered sugar and 2 tablespoons sparkling wine, then mix on low until combined. Beat on medium-high for 1 to 2 minutes until light and fluffy.
- Make the cake dough: Crumble the cooled cake into the buttercream with your hands. Mix on low speed for about 1 minute, until a sticky dough forms.
- Roll and freeze: Scoop the dough into 1½-tablespoon balls and roll each one between your palms until smooth and round. Place them on the lined baking sheet and freeze for at least 1 hour and up to 12 hours.
- Melt the candy coating: Melt 3 cups white candy melts in a medium microwave-safe bowl in 15-second intervals, stirring between each, until smooth, about 45 seconds. Then pour the coating into a tall liquid measuring cup or glass so dipping is easier.
- Stick and dip: Let the frozen balls sit at room temperature for 5 minutes, then dip about 1/2 inch of a lollipop stick in the melts and push it halfway into a ball. Dip each ball into the coating, tap off the excess and set it upright on the baking sheet. If a ball starts to slide, chill it for 10 minutes first.
- Drizzle and decorate: Remelt the candy melts if needed and spoon about 1/3 cup into a piping bag or zip-top bag with the tip snipped off. Twirl each pop while drizzling, then sprinkle with the mixed nonpareils and sugar pearls while the coating is wet and let them set about 15 minutes.

FAQs
Can I use a different sparkling wine?
Prosecco and cava work just like champagne, since the cake only needs the bubbles and a light, dry flavor. Keep the wine at room temperature so it blends smoothly into the batter and the buttercream.
How long do champagne cake pops keep?
Store them in an airtight container in the fridge for up to 5 days, because the buttercream center needs to stay cold. Let them sit out for about 15 minutes before serving so the centers soften.
Can I make these cake pops ahead of time?
Yes, the rolled cake balls can freeze for up to 12 hours before you dip them. You can also finish the whole batch a day or two early and keep the pops chilled until the party.
What can I use if I don't have a stand mixer?
A hand mixer beats the buttercream just as well, so use medium speed and watch the bowl for splatter. Crumbling the cake into it by hand and stirring with a sturdy spatula works too.
What's the most common mistake with cake pops?
Dipping balls that have gotten too warm is the big one, because they get soft and slide off the stick. Pop them back in the fridge for 10 minutes whenever they feel soft, then keep dipping.
