Pioneer Woman chicken tetrazzini takes 1 hour and rotisserie chicken, spaghetti and three cheeses to make a creamy, bubbly baked pasta casserole. Save this easy chicken casserole dinner for cozy Sunday dinners, winter weeknights or holiday potlucks, because it's a make-ahead family comfort food.
Cook the spaghetti 2 minutes less than the package says, because the noodles keep softening in the oven. Skip that and you end up with a dry, mushy casserole that soaks up all the sauce.
Crispy bacon, chopped green olives and a squeeze of lemon turn a classic tetrazzini into something with more going on. The lemon zest in the buttery panko topping also keeps the cheesy sauce from tasting heavy.

kcalSpaghetti and shredded chicken sit in a silky sauce of cream cheese, white cheddar and parmesan. A crisp, golden panko topping bakes over the creamy pasta underneath.
Ingredients
4 tbsp. salted butter, plus more for the pan
2 tsp. kosher salt, plus more for the pasta water
1 lb. spaghetti, broken in half
4 slices bacon
1 (8-ounce) package cremini mushrooms, quartered
4 garlic cloves, finely chopped
3 tbsp. all-purpose flour
3/4 c. dry white wine
4 c. chicken broth
1 (8-ounce) package cream cheese, cubed
1 c. shredded white cheddar cheese (about 4 ounces)
1 c. grated parmesan cheese
3 1/2 c. shredded rotisserie chicken
1 c. frozen peas
1/2 c. finely chopped green olives
1 tsp. black pepper, plus more to taste
Grated zest and juice of 1 lemon
1/2 c. panko breadcrumbs
1/4 c. flat-leaf parsley, chopped
Directions
- Prep the oven: Preheat the oven to 350°F. Then butter a 13-by-9-inch baking dish and set it aside.
- Boil the pasta: Bring a large pot of salted water to a boil and cook 1 pound of broken spaghetti 2 minutes less than the package says. Reserve 1 cup of the pasta water, then drain the pasta and set it aside.
- Crisp the bacon: While the pasta cooks, fry 4 slices of bacon in a large Dutch oven over medium heat for 5 to 7 minutes, flipping now and then. Move the bacon to a paper-towel lined plate to cool, then crumble it.
- Sauté the mushrooms: Melt 2 tablespoons butter in the bacon drippings over medium-high heat, then add 1 package quartered cremini mushrooms and 1/2 teaspoon salt. Sauté for 5 to 7 minutes until golden, then stir in 4 chopped garlic cloves for 1 minute.
- Build the sauce: Sprinkle in 3 tablespoons flour and cook for 2 to 3 minutes until slightly toasted. Add 3/4 cup white wine and reduce it by half, then slowly stir in 4 cups chicken broth and cook 7 to 9 minutes until slightly thickened.
- Melt in the cheese: Reduce the heat to medium low and gradually stir in the cubed cream cheese, 1 cup white cheddar and 3/4 cup parmesan. Keep stirring until everything melts smooth.
- Combine everything: Add the pasta, 3 1/2 cups shredded rotisserie chicken, 1 cup frozen peas, 1/2 cup chopped green olives, the bacon, 1 teaspoon pepper, the juice of 1 lemon and the remaining 1 1/2 teaspoons salt, then stir. Add the reserved pasta water 2 tablespoons at a time, up to 1 cup, until the mixture looks almost soupy.
- Mix the topping: Melt the remaining 2 tablespoons butter in a medium bowl in the microwave. Stir in 1/2 cup panko, 1/4 cup chopped parsley, the lemon zest and the remaining 1/4 cup parmesan.
- Bake and rest: Pour the spaghetti mixture into the prepared dish and sprinkle the breadcrumb mixture over the top. Bake for about 25 minutes until bubbly and golden brown, then let it rest for 5 minutes before serving.

FAQs
Can I use leftover turkey instead of rotisserie chicken?
Yes, shredded turkey works the same way in this casserole. Use the same 3 1/2 cups and the sauce will carry the flavor.
Can I make this casserole ahead of time?
You can assemble it a day ahead, cover it and keep it in the fridge. Add the breadcrumb topping right before baking so it stays crisp, and give the dish a few extra minutes in the oven since it starts cold.
What if I don't have a Dutch oven?
Any large, deep, heavy-bottomed pot or skillet will do the job. You just need enough room to cook the bacon, build the sauce and stir in the pasta.
Can I leave out the green olives?
You can, and the casserole will still taste good. The olives add a salty, briny edge, so if you skip them, taste the sauce before baking and add a pinch more salt if it needs it.
What's the most common mistake with this recipe?
Adding all the pasta water at once or skipping it entirely is the usual slip. The pasta soaks up a lot of liquid in the oven, so the mixture should look almost soupy going in, or the finished dish turns dry.
