Pioneer Woman Berry Chantilly Cake

Pioneer Woman berry chantilly cake is a showstopping layer cake made with fluffy white cake, mascarpone whipped cream and fresh mixed berries, ready in 3 hours 15 minutes. Bake this make-ahead birthday cake for Mother's Day, Easter or a bridal shower, since it feeds 12 and the frosting is forgiving.

Let all three cake layers cool completely, about 1 hour, before you frost anything. Warm cake melts the whipped cream frosting and the berries slide right out of the layers.

Brushing each layer with thinned raspberry jam keeps the cake moist and adds a fruity sweetness you won't find in a plain layer cake. Cream cheese and mascarpone also stabilize the whipped cream, so the frosting holds its shape between the layers and for the swipes up the sides.

Tender white cake layers soak up a light raspberry syrup, then get stacked with clouds of tangy mascarpone cream and fresh berries. The frosting stays fluffy and holds its swirls, so slices come out tall and clean.

Ingredients

  • Baking spray, for the pans

  • 4 c. all-purpose flour

  • 1/4 c. cornstarch

  • 1 tbsp. baking powder

  • 1 tsp. kosher salt

  • 1 c. (2 sticks) salted butter, at room temperature

  • 2 1/2 c. granulated sugar

  • 1/2 c. vegetable oil

  • 3 large eggs plus 3 large egg whites, at room temperature

  • 1 tbsp. vanilla extract

  • 1/2 tsp. almond extract

  • 1 1/2 c. buttermilk, at room temperature

  • 6 oz. cream cheese, at room temperature

  • 3 oz. mascarpone cheese, at room temperature

  • 1 1/2 c. powdered sugar

  • Pinch of kosher salt

  • 2 1/2 c. heavy whipping cream

  • 1/2 tsp. vanilla extract

  • 1/4 c. seedless raspberry jam

  • 1 c. blackberries (about 5 ounces)

  • 1 c. blueberries (about 6 ounces)

  • 1 c. raspberries (about 5 ounces)

  • 1 c. sliced strawberries (about 5 ounces), plus 2 halved strawberries for garnish

  • 1 tbsp. apricot jam (optional)

Directions

  • Prep the pans: Place an oven rack in the center and preheat the oven to 350°F. Spray 3 (8-inch) round cake pans with baking spray and line the bottoms with parchment paper.
  • Whisk the dry ingredients: Whisk 4 cups flour, 1/4 cup cornstarch, 1 tablespoon baking powder and 1 teaspoon kosher salt in a medium bowl. Set it aside while you start the batter.
  • Cream the butter: Beat 1 cup butter and 2 1/2 cups granulated sugar with the paddle attachment on medium-high for about 3 minutes, until light and fluffy. Then stream in 1/2 cup vegetable oil on low and beat on medium-high for 1 minute until smooth.
  • Add eggs and flour: Beat in 3 eggs and 3 egg whites one at a time on medium-low, then add 1 tablespoon vanilla and 1/2 teaspoon almond extract. Gradually beat in the flour mixture in three batches, alternating with 1 1/2 cups buttermilk, just until incorporated.
  • Bake the layers: Divide the batter evenly among the pans and bake for 35 to 40 minutes, rotating halfway through. They're done when the edges are golden and a toothpick comes out clean.
  • Cool the cakes: Let the cakes cool in the pans for 10 minutes, then turn them out and peel off the parchment. Return them to the racks to cool completely, about 1 hour.
  • Whip the frosting: Whip 6 ounces cream cheese, 3 ounces mascarpone, 1 1/2 cups powdered sugar and a pinch of salt on medium-high for 3 to 4 minutes, until smooth and fluffy. Then gradually add 2 1/2 cups heavy cream and 1/2 teaspoon vanilla, whipping 1 to 2 minutes until stiff peaks form.
  • Make the filling: Whisk 1/4 cup seedless raspberry jam with 3 tablespoons hot water to make a thin syrup. Combine 1 cup blackberries, 1 cup blueberries, 1 cup raspberries and 1 cup sliced strawberries in a bowl.
  • Stack the cake: Level the cakes with a serrated knife if needed, then spread 1 tablespoon frosting on a cake stand to anchor the first layer. Brush it with raspberry syrup, spread 1 cup frosting and add 1 1/4 cups berries. Then repeat with the second layer and set the last cake on top, cut-side down.
  • Frost and decorate: Spread the remaining frosting over the top and sides, then smooth it with a bench scraper or offset spatula. Make diagonal swipes up the sides and arrange the remaining berries and 2 halved strawberries in a crescent on top. Then brush them with 1 tablespoon apricot jam if you like a glossy finish.

FAQs

Can I make berry chantilly cake ahead of time?

You can bake the layers a day ahead, wrap them well and keep them at room temperature. Frost and decorate on the day you serve it, since the fresh berries release juice the longer they sit.

How should I store leftover cake?

Cover the cake and keep it in the fridge, because the whipped cream frosting needs to stay cold. It tastes best within 2 days, as the berries soften and weep a little after that.

Can I use frozen berries instead of fresh?

Fresh berries work best here because frozen ones turn mushy and bleed color into the white frosting. If fresh aren't in season, thaw them completely and pat them very dry before layering.

Why should my ingredients be at room temperature?

Room temperature butter, eggs, buttermilk and cream cheese blend into a smooth batter and frosting without lumps. Cold ingredients can make the batter curdle and leave the frosting grainy.

What if I only have two cake pans?

Bake two layers first and keep the rest of the batter covered at room temperature. Then wash and re-prep a pan for the third layer, and expect the batter to bake a few minutes longer if it has been sitting.
