Pioneer Woman Best Chicken Empanadas

Pioneer Woman best chicken empanadas are an easy baked dinner made with shredded rotisserie chicken, sweet peppers and a bright herb sauce, ready in 1 hour 35 minutes. Save this easy chicken empanada recipe for Cinco de Mayo, date night or Sunday lunch, because it's make-ahead friendly.

Let the filling cool all the way before you shape anything, because warm filling melts the dough and tears the wrappers. Skip it and the empanadas leak in the oven instead of puffing up crisp.

Cooking the tomato paste until it darkens, then reducing the filling until the pan is dry, gives you a scoopable filling that stays put inside the wrapper. The herb sauce is blended with the oil streamed in slowly, so it turns creamy instead of chunky.

Smoky, paprika-spiced chicken sits inside a golden, crisp half-moon crust with crimped edges. A bright, creamy parsley sauce cuts through the richness with every bite.

Ingredients

  • 2 tbsp. olive oil

  • 1 onion, diced

  • 1 red bell pepper

  • 3 garlic cloves, minced

  • 1 tsp. kosher salt, divided, plus more to taste

  • 1/4 tsp. black pepper

  • 2 tbsp. tomato paste

  • 2 tsp. paprika

  • 1 tsp. oregano

  • 1/2 tsp. ground cumin

  • 2 1/2 c. shredded rotisserie chicken

  • 12 frozen empanada wrappers, thawed

  • 1 large egg, beaten

  • 2 c. fresh parsley

  • 1 garlic clove

  • 1 tbsp. red wine vinegar

  • 1/2 tsp. red pepper flakes

  • 1/2 tsp. kosher salt, plus more to taste

  • 1/4 tsp. dried oregano

  • 1/4 c. olive oil

Directions

  • Cook the vegetables: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1 diced onion, 1 red bell pepper, 3 minced garlic cloves, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper, then cook, stirring, for 4 to 5 minutes until the vegetables soften and begin to brown.
  • Season the filling: Stir in 2 tablespoons tomato paste, 2 teaspoons paprika, 1 teaspoon oregano and 1/2 teaspoon ground cumin. Keep stirring for about 1 minute until the tomato paste darkens.
  • Add the chicken: Add 3/4 cup water, 2 1/2 cups shredded rotisserie chicken and the remaining 1/2 teaspoon salt. Scrape the bottom of the skillet and stir for 2 to 3 minutes until the pan is dry, then add more salt if it needs it.
  • Cool the filling: Spread the filling on a baking sheet so it cools faster. It needs about 20 minutes to reach room temperature, which keeps it from melting the dough.
  • Blend the herb sauce: Combine 2 cups fresh parsley, 1 garlic clove, 1 tablespoon red wine vinegar, 1/2 teaspoon red pepper flakes, 1/2 teaspoon kosher salt, 1/4 teaspoon dried oregano and 1/4 cup water in a blender. Blend until the parsley is roughly chopped, then stream in 1/4 cup olive oil with the blender running and puree until combined.
  • Preheat the oven: Position racks in the upper and lower thirds of the oven and preheat to 375°F. Then line 2 baking sheets with parchment.
  • Shape the empanadas: Roll each of the 12 thawed empanada wrappers into a 5-inch round, then brush the outer edges with beaten egg. Top each with 1/2 cup of the chicken filling, fold in half and crimp the edges with a fork.
  • Bake until golden: Arrange the empanadas on the baking sheets about 1 inch apart and brush the tops with more beaten egg. Bake for about 30 minutes, switching the pans halfway through, until golden brown, then serve with the herb sauce.

FAQs

Can I use homemade dough instead of store-bought wrappers?

Yes, any empanada dough you like will work. Roll it to the same 5-inch rounds so the half-cup of filling fits and the edges still crimp closed.

How should I store leftover chicken empanadas?

Keep them in an airtight container in the fridge, where they hold for a few days. Reheat them in a 375°F oven rather than the microwave, because the oven keeps the crust crisp.

Can I make the empanadas ahead of time?

You can cook the filling and blend the sauce ahead and keep both in the fridge. Then shape and bake the empanadas when you're ready to serve, so the crust stays fresh and crisp.

Can I fry these instead of baking them?

You can, though this version is written for the oven. Baking at 375°F gives a golden, crisp crust without a pot of hot oil.

Why did my herb sauce separate?

The oil probably went in too fast. Keep the blender running and add a teaspoon of cold water or vinegar a little at a time until the sauce comes back together.
