Pioneer Woman Bibimbap

Pioneer Woman bibimbap is an easy Korean rice bowl made with marinated beef, sautéed vegetables and a fried egg, ready in 1 hour. It's an easy Korean rice bowl dinner for weeknights, date night or potluck gatherings, and it's naturally gluten-free with a few swaps.

Salt the zucchini and let it sweat for 10 to 15 minutes, then squeeze out every drop of water you can. Skip that and the zucchini turns limp and soggy in the pan instead of staying tender with a little bite.

Sautéing the vegetables from light to dark, with zucchini first and carrots last, keeps every color bright instead of turning the pan orange. Each topping also gets its own seasoning of scallions, garlic and sesame, so every bite tastes different once you mix the bowl.

Hot rice gets a spoonful of spicy gochujang sauce, then a fried egg, tender vegetables, savory beef and kimchi arranged around it. You stir it all together right before eating, so every forkful has soft rice, crisp-tender veggies and a runny yolk.

Ingredients

  • Avocado Oil Or Ghee, For Frying

  • FOR THE BEEF:
  • 8 oz. weight Beef Steak (Sirloin Or NY Strip Work Well), Thinly Sliced Against The Grain

  • 2 tbsp. Soy Sauce

  • 4 tsp. Sugar

  • 4 tsp. Sesame Oil

  • 4 tsp. Mirin

  • 2 tbsp. Finely Sliced Scallions

  • 2 tsp. Minced Garlic

  • 2 tsp. Toasted Sesame Seeds

  • Salt And Pepper, to taste

  • FOR THE RICE:
  • 2 c. Short Grain Fish

  • 2 c. Water

  • 2 tsp. Salt

  • FOR THE SPINACH:
  • 6 c. Baby Spinach

  • 1 tbsp. Finely Sliced Scallions

  • 1 tsp. Minced Garlic

  • FOR THE ZUCCHINI:
  • 1 Medium Zucchini, Julienne Or Thinly Sliced

  • 1 tbsp. Thinly Sliced Scallions

  • 1/2 tsp. Minced Garlic

  • 1 tsp. Sesame Oil

  • 1/2 tsp. Toasted Sesame Seeds

  • FOR THE MUSHROOMS:
  • 4 oz. weight Shiitake Mushrooms, Thinly Sliced

  • Salt To Taste

Directions

  • Marinate the beef: Mix 8 oz thinly sliced beef, 2 tablespoons soy sauce, 4 teaspoons sugar, 4 teaspoons sesame oil, 4 teaspoons mirin, 2 tablespoons scallions, 2 teaspoons garlic, 2 teaspoons sesame seeds, salt and pepper in a shallow dish. Cover it and refrigerate while you prep everything else.
  • Cook the rice: Rinse 2 cups short grain rice in a fine mesh sieve until the water runs clear, then add it to a heavy saucepan with 2 cups water and 2 teaspoons salt. Bring it to a boil, stir once, turn the heat to low and cover for 15 to 20 minutes until tender.
  • Blanch the spinach: Boil a medium pot of water, then cook 6 cups baby spinach for 30 seconds. Drain it, run it under cold water and squeeze out the excess water before mixing with 1 tablespoon scallions, 1 teaspoon garlic, sesame oil, sesame seeds, salt and pepper.
  • Salt the zucchini: Lay 1 julienned medium zucchini on a plate in a single layer and sprinkle with salt. Let it sweat for 10 to 15 minutes, then squeeze out the excess water and toss with 1 tablespoon scallions, 1/2 teaspoon garlic, 1 teaspoon sesame oil and 1/2 teaspoon sesame seeds.
  • Sauté the zucchini: Heat a large cast iron skillet over high heat and add 2 teaspoons avocado oil or ghee. Cook the zucchini mixture for only about 2 minutes until soft, then move it to a plate.
  • Sauté the mushrooms: Wipe out the pan with a wet paper towel held in tongs, so the steam doesn't burn your fingers. Add more oil if needed, toss in 4 oz sliced shiitake mushrooms with salt and cook about 5 minutes until tender.
  • Sauté the carrots: Wipe out the pan again, add oil if needed and cook the carrots with salt and pepper for 3 to 4 minutes. They should be tender-crisp, and cooking them last keeps their color from tinting the other vegetables.
  • Cook the beef: Wipe out the pan once more, add oil if needed and dump in the beef with all of its marinade. Sauté until it's no longer pink, and watch it closely because thin slices overcook fast.
  • Make the sauce: Whisk gochujang, sugar, toasted sesame oil and soy sauce in a small bowl. Keep whisking until the sugar dissolves.
  • Assemble the bowls: Spoon hot rice into a bowl, top it with some bibimbap sauce and set a fried egg in the middle. Arrange the vegetables, beef and kimchi around the egg, then stir everything together just before eating.

FAQs

Can I use a different cut of beef for bibimbap?

Sirloin and NY strip both work well, though NY strip is the more tender of the two. Whatever you pick, slice it very thin against the grain, which is easier when the beef is slightly frozen.

How do I make bibimbap gluten-free?

Swap the soy sauce for tamari or coconut aminos. Gochujang, kimchi and mirin are traditionally gluten-free, but some store-bought brands add wheat, so check the labels.

Can I make bibimbap ahead of time?

Yes, you can prep the beef marinade and the vegetables ahead, then reheat everything and fry the egg when you're ready to eat. Storing each topping in its own container keeps the flavors and colors from running together.

What can I use if I can't find gochujang?

Sriracha works as a stand-in if your store doesn't carry gochujang. It's thinner and tastes less sweet, so you may want a small pinch of sugar in the sauce.

Do I have to use short grain rice?

Short grain rice gives the most authentic texture, and sushi rice is a good substitute if you can't find Korean rice. Long grain rice works too, though it won't be as sticky.
