Pioneer Woman Cheesy Beef and Sweet Potato Taco Casserole

Pioneer Woman cheesy beef and sweet potato taco casserole is a hearty layered dinner made with ground beef, sweet potato and tortilla chips, ready in 1 hour 25 minutes. Try this easy taco night casserole for family dinner or game day, since it's a cheesy comfort food that feeds a hungry crowd.

Cook the beef and sweet potato mixture until the sweet potato has really softened before you layer anything. Skip that and you end up with firm, undercooked sweet potato in a casserole that has no time left to fix it.

Layering tortilla chips between the beef mixture soaks them in the salsa and tomato juices, so they turn tender and taste like chilaquiles. Spiralizing the sweet potato into strands also lets it fold right into the beef instead of sitting in chunks.

Spiced beef and sweet potato strands sit between layers of soft tortilla chips under a blanket of two melted cheeses. The foil keeps everything tender while it bakes, then a quick broil browns the top.

Ingredients

  • 2 Medium-large Sweet Potatoes

  • 1 lb. Lean Ground Beef

  • 1 Large Onion, Diced

  • 3 cloves (Large) Garlic, Minced

  • 1 Large Red Bell Pepper, Diced

  • 1 c. Frozen Corn Kernels

  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained

  • 1 can (14 1/2 Oz. Size) Diced Fire-roasted Tomatoes (Do Not Drain)

  • 2 c. Chunky Salsa

  • 2 tsp. Chili Powder

  • 2 tsp. Ground Cumin

  • 1 tsp. Smoked Paprika

  • 1 tsp. Dried Mexican Oregano

  • 1/4 tsp. Cayenne Pepper (or More To Taste)

  • 1/2 tsp. Kosher Salt

  • 1/4 tsp. Ground Black Pepper

  • Thick Corn Tortilla Chips, As Needed

  • 8 oz. weight Shredded Mexican Cheese Blend

  • 4 oz. weight Shredded Pepper Jack Cheese

  • Sliced Green Onion And Chopped Cilantro, For Garnish (optional)

  • Salsa, Guacamole, Sour Cream, To Serve (optional)

Directions

  • Preheat and prep: Preheat the oven to 375°F and lightly spray a 9 x 13 baking dish with nonstick spray. Then set it aside while you work on the filling.
  • Spiralize the sweet potatoes: Peel and spiralize 2 medium-large sweet potatoes, chopping a bit to shorten any very long strands. If you don't have a spiralizer, dice them into small cubes instead.
  • Brown the beef: In an extra-large skillet over medium to medium-high heat, brown 1 lb. lean ground beef with 1 large diced onion, breaking up any large chunks. Once the pink is almost gone, stir in 3 cloves minced garlic and cook for 2 more minutes.
  • Add the vegetables: Stir in 1 large diced red bell pepper, 1 cup frozen corn and the sweet potato. That gets everything evenly mixed before the liquids go in.
  • Season and simmer: Add 1 can black beans, 1 can diced fire-roasted tomatoes with their juice, 2 cups chunky salsa, 2 tsp. chili powder, 2 tsp. ground cumin, 1 tsp. smoked paprika, 1 tsp. dried Mexican oregano, 1/4 tsp. cayenne pepper, 1/2 tsp. kosher salt and 1/4 tsp. black pepper. Turn the heat down to medium and cook for about 15 minutes, stirring a few times, until the sweet potato has softened.
  • Build the first layer: Spread 2 cups of the beef mixture into the bottom of the prepared baking dish. Then layer tortilla chips on top, slightly overlapping them.
  • Add beef and cheese: Drop half of the remaining beef mixture by spoonfuls over the chips and spread it into an even layer. Sprinkle half of the 8 oz. Mexican cheese blend and half of the 4 oz. pepper jack over the top.
  • Finish the layers: Top with another layer of tortilla chips, then the remaining beef mixture. Finish with the rest of both cheeses.
  • Bake covered: Cover the pan loosely with foil so it doesn't touch the cheese, then bake for about 30 minutes. It's ready when the cheese is melted and the casserole is heated throughout.
  • Broil and serve: Remove the foil, place the pan under the broiler and broil until the cheese browns the way you like it. Top with sliced green onion and chopped cilantro, then serve right away with salsa, guacamole or sour cream.

FAQs

Can I use diced sweet potato instead of spiralized?

Yes, dice it into small cubes and the dish works just as well. Diced pieces need a bit more time in the skillet, so keep cooking until the sweet potato has softened.

Can I swap the ground beef for another meat?

Ground turkey or ground chicken both work, since the salsa and spices carry most of the flavor. Cooking times stay about the same, but watch for dryness with leaner meat.

How do I store and reheat leftovers?

Cover the casserole well and keep it in the fridge. Reheat portions in the oven until hot all the way through, because the microwave leaves the chips soft and the cheese rubbery.

Can I assemble this casserole ahead of time?

You can cook the beef and sweet potato mixture ahead and keep it in the fridge. Layer it with the chips and cheese just before baking, so the chips don't sit in the liquid too long.

How can I make it less spicy or more spicy?

The cayenne is the main heat source, so cut it back or leave it out for a milder casserole. For more kick, add extra cayenne or use hot salsa and pepper jack.
