Pioneer Woman Chipotle Bacon Turkey Sliders

Pioneer Woman chipotle bacon turkey sliders are juicy mini burgers with spicy chipotle turkey, sharp cheddar and crispy bacon that come together in 45 minutes. Try these easy turkey slider appetizers for game day, potluck parties or Super Bowl spreads, since they're kid-friendly and ready fast.

Mince the chipotle pepper fine and mix it with the adobo sauce until the turkey is just combined, because that spreads the heat through every bite. Overmix it and the patties turn tough and dry instead of juicy.

Mashing a lemony avocado mayo by hand gives you a creamy, fresh spread without any store-bought mayonnaise. Making each patty the size of your roll also means every bite gets turkey, bacon and cheese together.

Spicy chipotle turkey patties brown in olive oil until golden, then get a slice of melted cheddar and crisp bacon on top. A cool, creamy avocado spread on a toasted Hawaiian roll balances the heat.

Ingredients

  • FOR THE SLIDERS:
  • 1 lb. Ground Turkey

  • 1 tsp. Salt

  • 1 tsp. Pepper

  • 3 cloves Garlic, Crushed

  • 1 Chipotle Pepper, Minced

  • 2 tsp. Adobo Sauce From The Can Of Chipotle Peppers In Adobo

  • 2 tbsp. Olive Oil

  • 8 slices Sharp White Cheddar Cheese

  • 8 slices Bacon, Fried And Broken Into Pieces To Fit The Sliders

  • 8 Hawaiian Rolls (dinner Size Rolls Work Best For Sliders), Toasted

  • FOR THE AVOCADO MAYO:
  • 2 Ripe Avocados, Pitted, Peeled, Chopped

  • 1 Lemon, Juiced

  • 1/4 tsp. Salt

  • 1/4 tsp. Pepper

Directions

  • Mix the turkey: Combine 1 lb ground turkey, 1 teaspoon salt, 1 teaspoon pepper, 3 crushed garlic cloves, 1 minced chipotle pepper and 2 teaspoons adobo sauce in a large bowl. Mix until just combined, so the patties stay tender.
  • Form the patties: Shape the turkey into 8 equal patties, making each about the size of your buns. Depending on your rolls, you might get up to 10 sliders.
  • Cook the sliders: Heat a large skillet over medium heat and add 2 tablespoons olive oil. Once the oil is hot, cook the patties about 5 minutes per side until golden brown and cooked through.
  • Melt the cheese: A minute or so before the sliders are done, lay a slice of sharp white cheddar on each patty. Let it melt while the turkey finishes cooking.
  • Make the avocado mayo: Mash 2 chopped ripe avocados with the juice of 1 lemon, 1/4 teaspoon salt and 1/4 teaspoon pepper in a bowl. Keep stirring until smooth, or use a food processor if you want it silky.
  • Add the bacon: Top each cheesy slider with a few pieces of fried bacon, broken to fit the buns. Use 8 slices of bacon in all.
  • Build and serve: Spread the avocado mayo on the bottom of each toasted Hawaiian roll, and on the top too if you like. Then add a slider to each roll and serve right away.

FAQs

Can I use ground chicken instead of ground turkey?

Ground chicken works well here, since it's just as lean and takes on the chipotle flavor the same way. Cook it until it's no longer pink in the middle, because poultry should always be cooked all the way through.

How do I make the sliders less spicy?

Use less of the minced chipotle pepper and skip the extra adobo sauce, since that's where most of the heat comes from. The avocado mayo and cheddar also help cool each bite.

Can I make these turkey sliders ahead of time?

You can mix and shape the patties a few hours ahead and keep them covered in the fridge. Make the avocado mayo right before serving, since avocado browns as it sits.

Can I cook the sliders without a skillet?

A grill pan gives you nice char marks, and a grill works too on medium heat. Just watch the time, because small patties cook quickly and can dry out.

What's the most common mistake with turkey sliders?

Overmixing the meat is the big one, since it makes the patties dense and dry. Mix only until everything is combined, then shape them gently.
