Pioneer Woman Chipotle Black Bean Veggie Burgers

Pioneer Woman chipotle black bean veggie burgers take 45 minutes and seasoned black beans, grated zucchini and chipotle chiles to make a crisp, hearty meatless burger. Try this easy vegetarian burger recipe for Father's Day cookouts or tailgate parties, since it's meatless and ready in one skillet.

Let the bean mixture sit for 5 minutes before you shape the patties, because that rest gives the breadcrumbs time to soak up moisture. Skip it and the patties turn loose and crumble in the skillet when you flip them.

Grating the zucchini, carrot and onion keeps the patties moist inside without any mushiness, which a plain bean patty can't do. The mashed black beans stay partly whole, so every bite still has real texture instead of tasting like paste.

Mashed black beans, grated vegetables and smoky chipotle bind into thick patties that crisp up in a hot cast-iron skillet. Muenster melts over the top while a chunky lime avocado mash goes on the toasted rolls.

Ingredients

  • 2 (15-ounce) cans seasoned black beans

  • 1 c. seasoned breadcrumbs

  • 1 small zucchini, coarsely grated (about 1 cup)

  • 1 medium carrot, coarsely grated (about 1/2 cup)

  • 1/4 white onion, coarsely grated (about 1/4 cup)

  • 1 large egg

  • 2 tbsp. chopped canned chipotle chiles in adobo sauce

  • 1 tsp. kosher salt, plus more to taste

  • Black pepper, to taste

  • 2 ripe avocados

  • Juice of 1 lime

  • 3 tbsp. vegetable oil

  • 6 slices muenster cheese

  • 6 onion rolls, split and toasted

  • Sliced tomato and pickled jalapeños, for topping

Directions

  • Mash the beans: Drain 2 cans of seasoned black beans without rinsing, then mash them with a fork in a bowl until mostly broken up. Leave some whole beans visible, so the burgers keep a hearty bite.
  • Mix the patty base: Add 1 cup breadcrumbs, 1 cup grated zucchini, 1/2 cup grated carrot, 1/4 cup grated onion, 1 egg, 2 tablespoons chopped chipotles, 1 teaspoon salt and pepper. Stir until combined, then let the mixture rest for 5 minutes.
  • Make the avocado mash: While the mixture rests, scoop 2 ripe avocados into a small bowl and add the juice of 1 lime. Season with salt and pepper, then mash with a fork, leaving it slightly chunky.
  • Shape the patties: Form the bean mixture into six patties, each about 1 inch thick and 4 inches wide. Set them on a plate while the skillet heats.
  • Cook the first side: Heat 3 tablespoons vegetable oil in a large cast-iron skillet over medium-high heat. Working in two batches, cook the patties for about 5 minutes until browned and crisp on the bottom.
  • Flip and add cheese: Flip the patties and top each with a slice of muenster cheese. Cook for 4 to 5 more minutes, until the other side is browned and crisp and the cheese melts.
  • Assemble the burgers: Spread the avocado mash on 6 split and toasted onion rolls. Set a burger on each one, then pile on sliced tomato and pickled jalapeños.

FAQs

Can I use a different cheese on these veggie burgers?

Pepper jack is a good swap if you want more heat, and cheddar or provolone work too since they all melt well. Add the slice right after flipping so it has the full 4 to 5 minutes to melt.

How long do leftover black bean burgers keep in the fridge?

Cooked patties keep in an airtight container in the fridge for about 3 days. Reheat them in a skillet over medium heat so the outside crisps up again, because the microwave leaves them soft.

Can I cook these burgers in a regular skillet instead of cast iron?

Yes, any large heavy skillet works, though cast iron gives the best crust because it holds heat so well. Keep the heat at medium-high and don't crowd the pan, since packed patties steam instead of browning.

What if my bean mixture feels too wet to shape?

Stir in another couple of tablespoons of breadcrumbs and give it a few more minutes to rest. Wet grated zucchini is usually the cause, so squeezing it in a paper towel before mixing helps too.

Can I make these burgers gluten-free?

Swap in gluten-free breadcrumbs for the seasoned breadcrumbs and serve the burgers on gluten-free buns or in lettuce wraps. Check that your canned beans and chipotles in adobo carry no gluten ingredients, since labels vary by brand.
