Pioneer Woman Chipotle Bloody Marys

Pioneer Woman chipotle bloody marys turn chipotle peppers, horseradish and chilled vodka into a smoky, spicy brunch cocktail topped with seared prawns in 25 minutes. Try this easy brunch cocktail for Sunday brunch, game day or holiday mornings, since it's make-ahead friendly and loaded with garnishes.

Blend the chipotle peppers into a smooth puree before anything else, because that puree flavors both the drink and the prawns. Chunky peppers leave you with uneven heat and a gritty sip.

Marinating the prawns in a bit of the same chipotle puree means the garnish tastes like the drink it sits in. Then a quick sear in a hot skillet gives them golden edges that a plain boiled shrimp cocktail never gets.

A smooth chipotle and vegetable juice base gets its kick from horseradish and a splash of vodka, then sits over ice with a crunchy celery stick. Seared prawns and pickled garnishes finish each glass, so every sip has smoke, heat and bite.

Ingredients

  • 1/4 c. Canned Chipotle Peppers, With The Adobo Sauce (depending On How Smoky And Spicy You Like It)

  • 46 oz. fluid Chilled Vegetable Juice, Divided

  • 1/2 c. Prepared Horseradish

  • 1 tsp. Celery Seeds

  • 4 dashes (generous) Worcestershire Sauce

  • 1 c. Chilled Vodka

  • Ice, As Needed

  • 12 Large Prawns, Peeled And Deveined

  • 2 tbsp. Olive Oil

  • Lemon Wedge, For Rimming The Glass (optional)

  • Kosher Salt

Directions

  • Blend the chipotle puree: Blend 1/4 cup canned chipotle peppers with their adobo sauce and 1/2 cup vegetable juice on high in a blender. Keep going until you have a smooth puree.
  • Marinate the prawns: Spoon 1/4 cup of the puree into a small bowl with the 12 peeled and deveined prawns. Let them marinate for at least a few minutes while you mix the drink.
  • Mix the pitcher: Combine the remaining puree, the rest of the 46 oz vegetable juice, 1/2 cup horseradish, 1 teaspoon celery seeds, 4 generous dashes Worcestershire sauce and 1 cup chilled vodka in a large pitcher. Stir well, season to taste with kosher salt, then chill until serving.
  • Sear the prawns: Heat 2 tablespoons olive oil in a heavy skillet over medium-high heat, then add 6 prawns at a time. Cook about 1 minute per side until golden on the edges and opaque in the center, then set them aside and repeat with the rest.
  • Rim the glasses: If you like a salted rim, rub a lemon wedge around the edge of each glass. Then dip the rim into a plate of kosher salt.
  • Pour and garnish: Fill the glasses with ice and pour the bloody mary mixture over it. Top each one with seared prawns and whatever garnishes you like.

FAQs

Can I make chipotle bloody marys without vodka?

Leave the vodka out and you have a spicy virgin version that still tastes smoky and bold. Add a squeeze of lemon to keep the flavor bright, since the vodka's sharpness is gone.

How far ahead can I mix the pitcher?

The drink mix keeps well in the fridge until you're ready to serve, and the flavors blend nicely as it sits. Cook the prawns close to serving time so they stay tender and warm.

How do I make it less spicy?

Use less of the canned chipotle peppers, since they bring most of the heat and smoke. Start with a smaller amount of the adobo sauce too, then taste and add more.

What can I use instead of prawns?

Crisp bacon, a skewer of pickled vegetables or a simple celery stick all work as toppers. They give you the same garnish-in-the-glass fun without any cooking.

What's the most common mistake with bloody marys?

Skipping the taste test is the big one, because vegetable juice brands vary in salt and spice. Season with kosher salt and horseradish a little at a time until it tastes right to you.
