Pioneer Woman bacon and egg croissant boats are an easy breakfast made with flaky croissants, crispy bacon, pesto and baked eggs, ready in 55 minutes. That makes them a go-to for Easter brunch, weekend mornings or any time you want something more fun and filling than plain eggs and toast.
The key step is pressing the fillings down before cracking in the egg, since a shallow boat lets raw egg spill over the sides. Without that extra space the yolk just sits on top and never sinks in, so you lose the runny center.
Most egg-in-a-hole recipes use sliced bread, but the croissant shell here gives you a buttery, layered base with a natural cavity for fillings. And the sautéed vegetables tucked inside mean you get a full breakfast in every bite, so nothing else needs to go on the plate.

Pioneer Woman Bacon and Egg Croissant Boats

kcalEach croissant is hollowed into a boat and spread with pesto, cheese, bacon and sautéed vegetables. Then a whole egg goes in and bakes until the whites just set and the edges turn golden.
Ingredients
5 slices bacon
1 red bell pepper, chopped
1 shallot, chopped
3 c. baby spinach, coarsely chopped
1/2 tsp. kosher salt
1/2 tsp. black pepper
6 croissants
6 tbsp. refrigerated pesto
3/4 c. shredded fontina or havarti cheese (about 3 ounces)
6 large eggs
2 tbsp. fresh basil, chopped
Directions
- Cook the bacon: Preheat the oven to 350°F and line a baking sheet with parchment paper. While it heats, cook the bacon in a medium skillet over medium heat, flipping often, until crispy, 5 to 7 minutes. Once done, transfer to a paper towel-lined plate to cool, then crumble.
- Sauté the vegetables: Pour off all but 1 tablespoon bacon fat, then add the bell pepper and shallot and cook until soft, 3 to 4 minutes. Next, stir in the spinach with 1/4 teaspoon each salt and pepper, cook until wilted, about 1 minute, then remove from heat to cool.
- Hollow the croissants: Use a serrated knife to cut a 4-by-2-inch oval from the top of each croissant, then press down inside to create a boat-shaped cavity. Then arrange the boats on the baking sheet with the tops alongside.
- Layer the fillings: Spoon 1 tablespoon pesto into each boat and spread it on the bottom and sides, then line with about 2 tablespoons cheese. Next, divide the bacon among the boats, reserving 1 tablespoon for topping, and add about 2 1/2 teaspoons of the veggie mixture to each. Once layered, press the filling down to make room, then crack each egg into a small bowl and gently tip it in. Finish by sprinkling with the remaining 1/4 teaspoon each salt and pepper.
- Bake and serve: Bake until the egg whites are set but the yolks still jiggle, 28 to 32 minutes, then let cool for 5 minutes. Then sprinkle with basil and the reserved crumbled bacon before serving with the croissant tops for dipping.

FAQs
What cheese works best if I don't have fontina?
Havarti is the closest swap since it melts the same way with a mild, creamy flavor. You could also try gruyère or mozzarella, though gruyère adds a nuttier taste that pairs well with the pesto.
How long do leftover croissant boats last in the fridge?
They keep in an airtight container for up to 2 days, though the croissant will soften as it sits. To bring back the crunch, reheat in a 325°F oven for about 10 minutes, since the microwave turns them rubbery.
Can I use store-bought crescent rolls instead of croissants?
Crescent rolls are thinner and don't hold up as well, so the filling tends to leak through during baking. Instead, look for bakery-style or frozen puff croissants, which give you a sturdier shell with more room for the egg.
Do I need a serrated knife to hollow out the croissants?
A serrated knife works best because it grips the flaky layers without crushing them. If you don't have one, a sharp paring knife works in a pinch, but you'll need to saw gently to avoid tearing the bottom.
Why did my eggs come out overcooked?
Ovens vary, so start checking at 25 minutes and pull them when the whites are just set but the yolks still jiggle. That runny yolk firms up on its own during the 5-minute rest, since carryover heat keeps cooking the egg after it leaves the oven.
