Pioneer Woman Caribbean Burgers with Mango Slaw

Pioneer Woman Caribbean burgers with mango slaw turn ground beef, teriyaki sauce and ripe mango into juicy, charred burger dinners in 40 minutes. Try this easy summer burger recipe for weeknight dinner or a backyard cookout, since the broiler does all the cooking and the slaw adds a fresh crunch.

Broil the patties until they're lightly charred in spots, about 4 minutes per side. Pull them early and you miss the smoky edges that make these taste like they came off a grill.

Teriyaki sauce, fresh ginger and grated garlic go right into the beef, so every bite is seasoned all the way through. The slaw gets its heat from Sriracha and its brightness from the juice of 4 limes, which beats plain mayo-heavy coleslaw.

Teriyaki-spiked beef patties char under the broiler while a tangy red cabbage slaw with mango and mint chills alongside. Stacked on toasted brioche with avocado, the result is juicy, sweet, spicy and fresh all at once.

Ingredients

  • 1/2 head red cabbage, thinly sliced

  • Juice of 4 limes

  • 2 tbsp. Sriracha

  • 2 tsp. kosher salt

  • 3/4 tsp. black pepper

  • 2 lb. ground beef

  • 3 tbsp. teriyaki sauce

  • 1 tbsp. grated fresh ginger

  • 3 garlic cloves, finely grated

  • 2 ripe mangoes

  • 1 bunch scallions, thinly sliced

  • 1 c. fresh mint leaves, torn

  • Pinch of sugar (optional)

  • 6 brioche hamburger buns, toasted

  • Mayonnaise, for serving

  • 6 lettuce leaves

  • 1 avocado, peeled and thinly sliced

Directions

  • Dress the cabbage: Toss 1/2 head thinly sliced red cabbage with the juice of 4 limes in a large bowl. Add 1 tablespoon Sriracha, 1 teaspoon kosher salt and 1/4 teaspoon black pepper, then cover and chill until you're ready to serve.
  • Mix the patties: Preheat the broiler, then combine 2 pounds ground beef, 3 tablespoons teriyaki sauce, 1 tablespoon grated ginger and 3 grated garlic cloves in a medium bowl. Add 1 tablespoon Sriracha, 1 teaspoon salt and 1/2 teaspoon pepper, mix with your hands, then form 6 patties about 3/4 inch thick and set them on a wire rack over a rimmed baking sheet.
  • Broil the patties: Broil the patties until they're lightly charred in spots, about 4 minutes per side for medium rare. The wire rack lets the heat hit all sides, so they stay juicy.
  • Prep the mangoes: While the burgers cook, peel the 2 ripe mangoes. Thinly slice 1 mango for the burgers and chop the other into small pieces.
  • Finish the slaw: Add the chopped mango, 1 bunch sliced scallions and 1 cup torn mint leaves to the slaw and toss. If the mangoes aren't sweet enough, stir in a pinch of sugar.
  • Build the burgers: Serve the patties on 6 toasted brioche buns with mayonnaise, lettuce leaves, the sliced mango and thin slices of 1 avocado. Spoon the slaw on the side.

FAQs

Can I grill these burgers instead of broiling them?

Yes, a hot grill works just as well and adds even more smoky flavor. Cook them over medium-high heat for about 4 minutes per side, so they char the same way they do under the broiler.

How long does the mango slaw keep in the fridge?

The cabbage will hold in the fridge for a day or two, but the mango and mint turn soft over time. For the best crunch, chill the dressed cabbage and add the mango, scallions and mint just before serving.

Can I make the patties ahead of time?

You can mix and shape the patties a few hours ahead and keep them covered in the fridge. Broil them straight from the fridge, then add a minute or so if they feel cold in the middle.

What can I use instead of Sriracha?

Any chili-garlic sauce works in its place, or you can use a little hot sauce for a milder kick. Start with less in the slaw, because the lime juice sharpens the heat.

What's the most common mistake with these burgers?

Overmixing the beef is the usual problem, since it makes the patties dense and tough. Mix just until the teriyaki, ginger and garlic are combined, then shape them gently.
